IMO, just do a full back up to an external drive. I takes awhile longer, but after you do the restore your PS3 will look just as it did before the HDD swap.
I just put in a 500GB HDD in my original 60GB. The only difference is I have lots of HDD space now!
If you don't have a big enough external HDD you can copy your (non-protected) saves to a flash drive and just re-download the stuff you want from the PS Store.
